This recipe can be easily doubled or multiplied as needed. Follow the guide of one spoon or one cup per person of the below ingredients and multiply from there i.e. if making for four people, add four cups of cooked pasta, four spoons of pesto etc.

Ingredients (for one)

Tablespoon of extra virgin olive oil
1 cup of cooked penne pasta (or a mix of regular penne and the San Remo Pulse Pasta), cooked according to packet
1 heaped tablespoon of pesto sauce from a jar
1 cup of your preferred choice of vegetable matter (spinach leaves, frozen peas, broccoli etc)
1 cup of your preferred choice of protein (cooked chicken chopped into chunks, tofu, canned chickpease/butter/cannellini beans – rinsed and drained)
Enthusiastic sprinkle of parmesan cheese to finish


  1. Cook pasta and drain.

  2. In a pan on medium heat drizzle in olive oil, throw in cooked pasta and pesto sauce.

  3. Stir through to coat.  

  4. Next add your veggies and protein of choice.

  5. Stir until cooked through 5-10mins.

  6. Serve in bowl with sprinkle of parmesan to top.
