These make a delicious quick snack option to throw in the bag. The recipe name is a work-in-progress. All the seeds and oats give your bowels a nice hit of fibre, but remember without water, fibre is just dry concrete in a pipe… hydrate!

This recipe requires no cooking and no blending, just a spoon and a bowl. You could do this standing on one leg with one arm tied behind your back… its that easy…

Ingredients

1 cup of oats
1/2 cup seeds of your choice (hemp seeds, pepitas, chia etc, choose one or use a mix)
1/2 cup choc chips or cocoa nibs (swap for dried fruit chopped up if you prefer)
3/4 cup of peanut/almond/cashew butter, I like the Mayvers dark roasted peanut butter for this recipe…mmmm
Splash of orange juice
Coconut for rolling (optional)

Method

  1. Mix all ingredients, except the orange juice, in a bowl with wooden spoon or spatula. 
  2. Once combined, slowly add the orange juice one little splash at a time to get a nice consistency that rolls well, but isn’t too sticky.
  3. Roll into 50c size balls or larger, and if you want to get fancy you can roll them in coconut.
  4. Serve immediately or keep in the fridge (they freeze well if you want to make a large batch).
