These make a delicious quick snack option to throw in the bag. The recipe name is a work-in-progress. All the seeds and oats give your bowels a nice hit of fibre, but remember without water, fibre is just dry concrete in a pipe… hydrate!
This recipe requires no cooking and no blending, just a spoon and a bowl. You could do this standing on one leg with one arm tied behind your back… its that easy…
Ingredients
1 cup of oats
1/2 cup seeds of your choice (hemp seeds, pepitas, chia etc, choose one or use a mix)
1/2 cup choc chips or cocoa nibs (swap for dried fruit chopped up if you prefer)
3/4 cup of peanut/almond/cashew butter, I like the Mayvers dark roasted peanut butter for this recipe…mmmm
Splash of orange juice
Coconut for rolling (optional)
Method
- Mix all ingredients, except the orange juice, in a bowl with wooden spoon or spatula.
- Once combined, slowly add the orange juice one little splash at a time to get a nice consistency that rolls well, but isn’t too sticky.
- Roll into 50c size balls or larger, and if you want to get fancy you can roll them in coconut.
- Serve immediately or keep in the fridge (they freeze well if you want to make a large batch).
